Olives are a traditional crop of the Mediterranean region. The oil is
produced by grinding whole olives and extracting the oil by
mechanical or chemical means. Olive oil is of a light yellow to golden
yellow color and has the typically slightly sweetish odor and flavor of
olives. It is mainly used in cooking, cosmetics, medicine, and to make
bars of soaps. It is highly nutrient and good for health due to its
richness in antioxidants and the main fat it contains is
monounsaturated fatty acids (MUFAs), which is considered a
healthful fat. The top producing countries are Palestine, Jordan, Syria,
Turkey and Tunisia which are the main sources of our import.
